Family_cooking_0611_Pita_pocketsPitapockets are a great way to do a quick snack or even a family dinner and use up all the bits of left over vegetables you have in the fridge. We love this quick and easy pita bread recipe.


The variations of a kebab are endless and they can be adapted to your family's favourite meats and veg. Spice it up with a bit of hummus, pesto or sweet chilli sauce. Vegetables can be eat raw, friend or steamed. You can add grated cheese and any spices you like.

 

 

What you need (serves 4)

8 Pita bread
600-800g Meat – beef, chicken or lamb.
Herbs or spices – fresh coriander, basil or mint, oregano, thyme, paprika
Vegetables – peppers, tomatoes, onion, courgette, cucumber
Lettuce leaves
Salt and pepper
Sauce – hummus, sweet chilli sauce, natural yogurt, tzatziki

What you do

Cut up the vegetable you are going to stuff the pita bread with. Courgettes, onions, peppers and tomatoes can all be eaten raw, steamed or fried in a bit of oil.

Fry up the meat, add salt, pepper and any dried spices you want. Chop up the fresh herbs you wish to use and add them to the meat once it is fried.

While vegetables or meat don't need to be cold to stuff the pita bread, neither do they need to be piping hot.

Put the pita bread into the microwave for a few seconds, this will make them softer and easier to handle. Once they cool a bit, open them up with a knife and stuff them with anything you like. Don't forget a sauce!
