Our favourite recipe for a scrummy tuna spread, a handy quick and cheap idea to put a little extra taste on your sandwich or a baked potato. Done in minutes and tastes divine.
What you need (makes 4-6 sandwiches)
1 can of tuna in brine
3 tbs of low fat mayonnaise
½ onion, very finely shopped
2-3 tbs lemon juice
2 tbs chopped parsley (optional)
Salt and pepper
Optional sandwich garnish
Slices of tomatoes
Lettuce leaves
Pepper slices
Cucumber slices
What you do
Chop the onion as finely as you can and mix it with the tuna, make sure to let the brine run out. Mix it and add the lemon juice. Mix in the mayonnaise and try staying on the conservative side to making it a healthier spread. Add salt and pepper to your taste; let the mix rest for a few minutes so that the flavours mix.
Spread the tuna spread onto the bread or baked potato, and garnish with optional choices above.
