A great idea made very popular by Jamie Olvier, and so easy. A little package for each member of the family and you can involve the kids by letting them choose their own ingredients.
What you need (serves 4)
800 g of fresh fish (salmon or whiting are a good choice)
Boiled potatoes
Optional ingredients and seasoning for the fish
Sliced spring onions
Little grated ginger
Lemon zest or/and juice
Thinly sliced carrots
Crushed garlic
Fresh coriander
Salt, pepper
Tin foil
What you do
Boil the potatoes, to go with the fish. Preheat the oven to 180 C (Gas mark 4).
Divide up the fish into individual portions, about 200 g per person. Cut the tin foil into squares to fold around the fish like little individual bags. Place the fish in the middle, add your seasonings and ingredients. Put the small packages on a baking tray and bake in the oven for about 20 minutes. Serve the fish packages with potatoes and a fresh salad.
