Fish is a healthy meal every family should have at least once a week. Fish cakes is a easy and cheap way of making sure your family eats a varied diet. Because of the price of fish, with this recipe you can use cheaper and frozen fish and it will not be stringy or tasteless.
What you need (serves 4)
650 g potatoes (preferably left over or boiled the day before)
350 g white fish or salmon (or both)
1 small onion, finely chopped
2 stalks of celery, finely chopped
handful of fresh parsley or coriander leaves
1 egg, lightly beaten
2 tbs of grated lemon zest
breadcrumbs or flour for dusting

What you do
Mash your potatoes. Fry the chopped vegetables slowly in olive oil until they are soft. Steam, poach or boil the fish until it is cooked.
Add the vegetables, chopped pareley or coriander, lemon zest and the beaten egg to the mash. Flake the fish with your fingers or put it through a mixer, depending if your family likes fish or not. Add the fish to the mash and mix.
Mould the fish cakes and place them on a oven tray, make sure to butter the tray or use baking paper, and lightly dust them with breadcrumbs or flour. Bake the fish cakes until they are golden in a preheated oven, 190 degrees, for about 8-10 minutes. Serve with a green sallad or cooked vegetables.
