Bread Ingredients
1 ½ tbs active dry yeast
2 tbs honey
2 tsp salt
2 cups of warm water
1 cup natural yogurt
7 ½ cups plain flour
Butter at room temperature (optional)
Bread Preparation
Make a yeast mixture in a bowl by dissolving the yeast and honey in the warm water. Set the mixture aside for 10 minutes until bubbles form. Add the salt and yogurt to the yeast mixture and stir. Sift the flour and add it gradually, keep stirring until most of the flour is used up or you can't mix it it with the spoon.
Knead the dough in a floured board for 5-10 minutes, slowly working in any remaining flour until the dough is smooth and elastic. Make two loaves by dividing the dough in halve and placing it in oiled 20x10 cm loaf pans. Cover the dough and let it rise in a warm place for 50 minutes or until it comes to the top of the pans. Preheat the oven to 180 C (gas mark 4).
Bake the loaves for 40 minutes or until they are browned and sound hollow when tapped. Remove the loaves from the pans and let them cool on a rack. For a soft crust, brush the tops of the loaves with butter.
Extras for your bread.
Do not be afraid to use nuts or seeds when making bread, such as poppy or sunflower seeds. Just add 1-3 spoons.
