Serves 4
You’ll only need to worry about one dish and you’ll have a full dinner out of the oven in an hour. Easy to make and ideal if you have an oven with a timer.
What you need
1 whole chicken
1 sliced onion
5 medium sized potatoes
1-2 sliced cloves of garlic
1 glass of white wine or stock
2 tbs olive oil
1 tbs butter (optional)
Paprika powder
Salt, pepper
What you do
Preheat the oven to 180 C (Gas mark 4)
Slice the potatoes and onion into rings. Pour a table spoon of oil into a deep baking dish and fill with a layer of sliced potatoes. Season generously with paprika powder, salt and pepper. Add a layer of onions and some sliced garlic. Keep adding alternated layers of potatoes with seasoning and onion. Finish off by pouring a glass of white wine or stock over the potatoes. Season the chicken with salt and peppar, you can also apply softened butter over or under the skin of the chicken with your fingers.
Let it bake for about 1.5-2 hrs.
Test the chicken by sticking in a knife for five seconds into the fleshiest bit or between the thigh and the body. Touch the knife to your lip, if it’s burning hot the chicken is done.
For the adventurous
You can always add a bit of chopped garlic between the layers of potatoes for a bit of spice.
